“The craft can’t be improvised.” Fabio Marcello Piras
Fabio Marcello Piras’ career began in the 1980s when he started working in the hottest bars in the center of Bologna.
From 1988 to 1990, he worked in Milano Marittima, where he became the maître d’ of one of the riviera’s most prestigious establishments: Il Pineta.
But his drive to improve his craft didn’t stop there. He then went to the U.K. where he prepared cocktails for the world’s jet set until, in 2005, a sense of nostalgia for home brought him back to his much loved Bologna.
Here, he currently manages a historic café, which is where Fabbri found him and then brought him in to teach his unique craftsmanship and style.
