For Francesco Elmi, joining the laboratory team at Pasticceria Calderoni di Bologna as an apprentice marked a the beginning of an important period of growth in which he gained experience and knowledge of working with the ingredients and tools of the trade and had his first direct responsibilities with the recipe, the written soul of every dessert.
Since 1994, he has been an invaluable Fabbri 1905 consultant, responsible for training courses and hands-on demonstrations. He also attends international industry trade shows as head of the company’s pastry lab. Within the company, he works actively in researching and developing new dessert ingredients, which are essential to perfecting the quality of both pastries and gelato.
His work with Carpigiani Gelato University, Bologna - a leading manufacturer of dessert-making equipment - as instructor and consultant has enabled him to further enhance his technical skills and achieve levels of performance that have brought Francesco Elmi into contact with Italian and international organizations in the industry, where he has been able to hone his craft and learned to transmit the skills of a master pastry chef to his students.
