The celebrations have begun for the 150th anniversary of the unification of Italy, an important milestone worthy of all the festivities.
From art and music to writing and architecture, Italy has given the world a wealth of cultural heritage that is the foundation of modern civilization. And how can we forget that fine Italian cuisine. In the past, the preparation of the best Italian desserts and other sweets had strong ties with both local tradition and with the various holidays such as Christmas, Easter, the festivals of the various patron saints, and other important occasions. The tradition of Italian pastries has also always been influenced by a combination of historical and climatic factors, a characteristic common to all Italian cuisine. In the north, for example, we see a prevalence of doughs and custards that are rich in cream and butter, while desserts in central and southern Italy feature ricotta and grape juice, almonds and figs, pistachios and candied fruit, wheat and olive oil.
So, in line with this tradition and in an effort to evoke the best of the recipes found in Garibaldi’s day, Fabbri’s team of pastry chefs has created “Dolcitalia”, a delicious, patriotic dessert that unites both culinary tradition and innovation.
On 17 March, 3,000 Italian restaurants throughout the world associated with Ciao Italia offered this three-layer triumph of semifreddo featuring the green of Sicilian pistachios, the white of almonds from Bari, and the red of Amarena Fabbri (with a special icing culminating in an amazing “crown” of amarena cherries) as a way of topping of a special menu prepared with the best in Italian culinary tradition and saying, “Happy Birthday Italia!”
The Italian Tricolor dessert presented in Shanghai at the most famous Italian restaurant in China, "Da Marco", was a great success. The DOLCEITALIA dessert, created exclusively using Fabbri ingredients and decorated with a mouth-watering Amarena on the top, was given the honor of being cut by the Italian Consul.
